  2. Place cottage cheese in a bowl, add sugar. Stir the curd mixture until smooth.
  3. Add nuts to the cottage cheese and form into balls with wet hands. Place pieces of dried fruit in the middle.
  4. Place the pieces on a silicone mat or baking paper and put them in the refrigerator for half an hour or an hour.
  5. Prepare the glaze. Grate the chocolate on a coarse grater or break it into small pieces and place in a bowl. Melt the chocolate in a water bath or in the microwave (in this case, you cannot heat the chocolate for more than 10 seconds at a time; after each heating, mix the mass thoroughly).

  1. Prepare the cottage cheese: if it is too wet, remove excess liquid, add a little sour cream or yogurt to the dry one. Beat the egg into the cottage cheese, add sugar and add salt.
  2. Add starch, flour and sour cream, knead the dough.
  3. Roll out the sausages from the curd dough on a floured cutting board, cut it into equal small pieces. Roll into balls.

Breakfast cereals (chocolate balls) for young Novy Urengoy residents: benefit or harm

Many parents sincerely believe that you can’t imagine a better breakfast for a child than crispy sweet balls (stars, rings): fast, tasty and, as advertising claims, healthy. Roskoshestvo decided to find out whether these breakfast cereals were really healthy and tested them for safety and quality (the study included chocolate balls, one of the largest segments of breakfast cereals on the Russian market).

According to the results of the study, the products of 12 brands out of 18 were recognized as high-quality and safe, while two of them - Globus (Russia) and Schär (Germany) - met not only the legal requirements for safety and quality, but also the advanced requirements of the Roskachestvo standard. Domestic dry breakfast under the Globus brand can qualify for the Russian Quality Mark.

The study revealed a serious violation regarding safety: the products of five brands ( VkusVill, Dansonia, Lenta, O'Key, Nesquik ) did not meet the requirements of TR CU 021/2011 “On the safety of food products” - in these Experts found that chocolate balls exceeded the permissible level of ochratoxin A. The rating of these products was reset to zero.

A violation of net weight was recorded for the products of one brand - the actual weight of the product turned out to be less than the declared weight by more than 100 grams, in addition, the manufacturer put the inscription “corn flakes” on the packaging of chocolate balls. The “labeling reliability” indicator for this brand has been reset to zero.

Since breakfast cereals are produced by hot extrusion, Roskachestvo has established advanced requirements for acrylamide content - no more than 300 mcg/kg. the Kuzya Lakomkin, Lenta, Krosby Choco Balls and Schär brands it is even below the detection limit.

Consumers have mixed feelings about breakfast cereals. Some consider them tasty and healthy, others are sure that this product does not bring any benefit to the body, moreover, it can even harm health.

The most common consumer fears include:

— consumers are convinced that ready-made breakfast cereals contain a lot of sugar and salt;

— there is an opinion that snacks contain trans fats, GMOs and contain pathogenic microorganisms and bacteria;

- it is believed that the information on the packaging most often does not correspond to reality: for example, the manufacturer adds preservatives and dyes, but this is not indicated in the labeling, or, on the contrary, writes that the composition contains vitamins and microelements, but in fact there are none.

During the study, experts found out which fears were justified and which were not.

Which fears were confirmed:

Breakfast cereals do contain a lot of sugar and salt. In the products of 15 brands, the mass fraction of sucrose significantly exceeded the requirements established by the advanced standards of Roskachestvo. In terms of the mass fraction of sugar, two brands meet the requirements of the leading Roskachestvo standard - Globus and Schär. The World Health Organization has developed general recommendations for reducing free sugars. The products of one brand, Mamori, which do not use sugar, according to the information on the label, can be called fully compliant with WHO recommendations. The snacks are made with honey.

In terms of the mass fraction of salt, 9 brands meet the leading standard of Roskachestvo: “VkusVill”, “Korovka”, “Kuzya Lakomkin”, “Ogo!”, “Good Day”, Globus, Nesquik, Schär, Spar.

The fear was confirmed that the information on the nutritional value of the product indicated in the labeling is not always true. In two of the 18 brands, discrepancies were identified in energy value, mass fraction of protein and mass fraction of fat. In six cases, inaccurate information was provided on the mass fraction of protein and fat; in one case, the mass fraction of fat did not coincide with the actual indicator. All brands that provided false information had their corresponding indicator reset to zero. This, in turn, affected the overall rating.

Which fears were unfounded:

Concerns about trans fats in breakfast cereals have not been confirmed. According to the indicator “trans-isomers of fatty acids”, there was no excess of the standards established by the technical regulations of the Customs Union.

No GMOs detected.

No pathogenic microorganisms (including salmonella), staphylococci and coliforms (coliform bacteria) were also detected.

The results of the study showed that unlabeled preservatives and dyes were not found in the breakfasts of all brands studied.

Contrary to consumer doubts, chocolate balls contain fiber, vitamins and minerals.

Unsweetened recipes

Unsweetened curd balls can be served either cold or hot.

Garlic

Curd balls with garlic are favorites of any holiday table. They are often served with herbs - you can use aromatic fresh basil, dill, parsley or cilantro. You can also add fried salted nuts to the curd mass, and use sweet red paprika as a topping.

Ingredients:

  • 2 large cloves of garlic;
  • 200 g of cottage cheese;
  • spices to taste;
  • a large bunch of greenery.

Preparation:

  1. In a deep, large bowl, mash the cottage cheese with a fork, add the garlic passed through a press.

Potato cheese balls will take a little longer. They turn out to be more satisfying and are quite suitable as a main dish or a hearty snack.

Ingredients:

  • 1 egg;
  • 3 tbsp. semolina;
  • 3 potatoes;
  • 50 g butter;
  • 300 g cottage cheese 1.5%;
  • vegetable oil – 50 g.

Preparation:

  1. Boil the potatoes and mash them, adding only butter.
  2. Bring the cottage cheese until smooth, leaving no lumps.
  3. Knead the dough from cottage cheese, semolina and mashed potatoes. Add egg, mix well.
  4. Roll into balls the size of a ping pong ball and place in the refrigerator for half an hour.
  5. Fry the cooled pieces over high heat until golden brown.
  6. Place in a baking dish, greased or lined with baking paper. Bake for 10 minutes at 180 degrees.

Curd balls fried in oil with condensed milk

The condensed milk filling makes everyday cottage cheese balls a delicious and unusual dessert. They prepare very quickly and do not require any special cooking skills. We prepare products:

  • 500 g – cottage cheese (9%);
  • 250 g thick boiled condensed milk;
  • Two eggs;
  • 1–1.5 tbsp flour;
  • 2 tbsp – granulated sugar;
  • 1 tsp – baking powder;
  • sweet powder;
  • refined oil.
  1. Grind the cottage cheese into a sieve. Place it along with vanilla sugar and granulated sugar in a deep bowl. Grind again.
  2. Beat in the eggs, mix until smooth.
  3. Add baking powder, sift flour.
  4. Knead the dough. It should be viscous and slightly stick to your palms.
  5. Wet your hands in water. Tear off a piece of dough and roll into a ball.
  6. Flatten it with your hand and place 0.5 tsp of boiled condensed milk in the middle.
  7. Seal the edges and re-shape into a neat ball, roll it in flour.
  8. Boil refined oil in a deep frying pan or saucepan with a thick bottom.
  9. Place the prepared balls into the boiling liquid and fry until golden crisp.
  10. Using a slotted spoon, remove the finished products. Place them on paper napkins and sprinkle with powder.

  • Sugar – 80 g;
  • Vanilla sugar - 5 g or vanillin - on the tip of a knife;
  • Baking powder – 1 tsp;

How to make fried curd balls

Cottage cheese can be used both homemade and store-bought. It is important to make sure that it is not very wet, otherwise you will need a lot more flour and the balls will turn out less airy.

Mix sugar, vanilla sugar, a pinch of salt, cottage cheese and eggs in a deep bowl. Rub the curd through a sieve or carefully break up the curd lumps with a fork.

Stir the resulting slightly liquid mass until the sugar is completely dissolved.

Mix all the flour into the dough, gradually pouring it into the bowl. Don't forget to sift the flour before cooking, this will eliminate unnecessary impurities and enrich it with oxygen. Add a spoonful of baking powder there too.

Avoid making the dough too stiff so that the donuts retain their fluffiness and are not too dense. The mass will stick a little to your hands and will not hold its shape well, so you need to form the balls with wet hands.

Place a deep frying pan or saucepan with vegetable oil on the fire and heat it over high heat. When the oil is hot (you can test it with a test, it should immediately sizzle and bubble), turn the heat to medium and form the curd balls. With your hands wet in cold water, scoop out a small amount of dough, roll it into a ball and drop it into the hot oil.

Deep fry a batch of curd balls for 7-8 minutes. If there is enough oil and it is heated to the desired state, then the balls themselves turn over in it and there is no need to help them.

After frying, remove the donuts to a plate, having previously covered it with a paper towel. This will allow excess oil to be absorbed into the paper. Lower the next portion to fry.

If you follow the recipe correctly and use the specified number of ingredients, you will get approximately the same number of donuts.

After the curd balls fried in oil have cooled, sprinkle them with powdered sugar and serve.

Curd balls with condensed milk

Sweet dishes made from cottage cheese have always been our favorite desserts since childhood.   5. Prepare a batch of 10-12 such balls at once, placing them on a table sprinkled with flour. By preparing raw donuts for frying in advance, you will significantly reduce cooking time and avoid wasting oil.
  6. Heat vegetable oil in a deep frying pan or small saucepan and place the filled curd balls into it. To ensure that the donuts are well baked and still retain their golden brown crust, reduce the heat to medium. If there is enough oil and its correct temperature, the curd balls do not need to be turned over; they will fry evenly on their own.
  7. Remove the finished donuts from deep frying using a slotted spoon and place on a napkin so that the paper absorbs excess oil. Cooled donuts hold their round shape very well and do not stick together when broken.
  8. Before serving, sprinkle the curd balls with powdered sugar.
