Raw cottage cheese Easter for proper nutrition - recipes without sugar and eggs

I cook cottage cheese with herbs almost all year round, if I have the two most important ingredients on hand: the freshest homemade cottage cheese - nothing good will come from store-bought cottage cheese - and any greens, which must also be fresh.

Unfortunately, dill prepared for the winter in any way cannot be used. So buy a greenhouse one, and if you think it’s too expensive/unhealthy for you, wait for the fresh young greens to appear. She is the most delicious.

In addition to dill, to prepare cottage cheese with herbs I use:

  • parsley;
  • cilantro;
  • green onions (only the green part of the feather);
  • young shoots of garlic;
  • and the garlic itself, in cloves.

My husband likes cottage cheese with a garlic component the most. He also can’t stand adding sour cream to this snack, so I’ll reveal our secret recipe.

Cottage cheese with garlic and herbs

  • 300 grams of homemade cottage cheese;
  • 55 grams of softened butter;
  • 4 sprigs of young dill;
  • 3 sprigs of young parsley or cilantro;
  • 1 green onion;
  • 1 large clove of garlic;
  • 2 pinches of ground black pepper;
  • salt to taste.

I don’t specifically indicate the amount of salt - everyone has their own preferences, we don’t add so much salt, but we add more pepper. You can adjust the amount of salt and spices to suit your taste.

Soften the butter in advance - first at room temperature, then additionally in the microwave or in a warm place. It should melt before your eyes, but not be melted. This is the main secret. To prepare a snack, rub homemade cottage cheese through a sieve to give the product a creamy structure. Add butter and stir.

Peel the garlic clove and grate it on a fine grater. Wash the greens, shake well, place on a napkin for additional drying. After that, chop it finely - as finely as you can. Moreover, use only the green leaves and discard the stems. Mix the chopped green ingredient, grated garlic, cottage cheese with butter and salt and ground pepper. Mix thoroughly. The mass should become airy and almost homogeneous. Only after this is it ready for use, and I advise you to additionally keep the “curd paste” in the refrigerator. At least 15 minutes.

Sometimes there is absolutely no time to bother with rubbing the cottage cheese and preparing the butter. In these cases, I use a quick cooking method.

Quick cottage cheese with herbs

  • 200 grams of cottage cheese;
  • 1 tablespoon of fat sour cream;
  • a bunch of any greenery weighing 25-30 grams;
  • a pinch of ground pepper, optional;
  • salt to taste.

Wash and dry the greens in advance, cut off the stems and leave the young leaves. Place cottage cheese and sour cream in the bowl of an immersion blender and turn on the device at medium power. While the dairy products are whipping:) finely chop the greens. Mix with curd mass, salt and pepper to taste.

You can also lose weight with the help of curd pasta with herbs. How? Now you'll find out.

Cottage cheese with greens for weight loss

  • 200 grams of low-fat cottage cheese;
  • 2 tablespoons 1% kefir;
  • 4 sprigs of cilantro;
  • 3 sprigs of dill;
  • 1 sprig of leaf celery;
  • 1 clove of garlic optional;
  • salt to taste.

You can also add a pinch of ground red hot pepper, but provided that you tolerate it well. By the way, I recently saw a recipe on one popular website - cottage cheese with herbs for weight loss, containing sour cream. I laughed for a long time: sour cream is one of the food taboos for those losing weight, does the author of the recipe really not care at all about the reputation of the site? Only kefir can be added to low-fat cottage cheese intended for dietary pasta.

Rub the cottage cheese through a sieve, add kefir, stir. Wash and dry the greens, cut off the stems, and finely chop the leaves. If adding garlic, peel it and grate it. Mix chopped greens with curd mass, salt to taste, add garlic and spices if desired.

If you want to diversify your diet, try adding something else to cottage cheese and greens.

Cottage cheese with herbs and cucumber

  • 100 grams of low-fat cottage cheese;
  • 1 teaspoon 1% kefir;
  • 100 grams of fresh cucumber;
  • 1 clove of garlic;
  • dill or parsley and salt to taste.

Rub the cottage cheese through a sieve and place in a mixing bowl. Rinse the cucumber, cut off the inedible edges and, cutting into large cubes, add to the cottage cheese along with a spoon of kefir. If desired, you can peel the cucumber, but this is not necessary, especially if it is fresh from the garden.

Peel the garlic clove and use a garlic press to add it to the rest of the ingredients. Finely chop the greens, washed under running water, beat cottage cheese with kefir and cucumber, mix with chopped herbs and salt.

Do you like sophistication? Then prepare an appetizer for the holiday table.

Avocado with cottage cheese and herbs

  • 1 large avocado;
  • 100 grams of homemade cottage cheese;
  • 5-6 sprigs of any young greenery, including an onion;
  • salt and spices to taste.

I don’t add garlic to this paste. No butter or sour cream either, the fat component of avocado is quite enough. I fill “boats” made from halves of the fruit with the prepared curd paste. There are 2 halves for 1 serving, so for guests, calculate the amount of products in proportion to the number of guests.

Mash the cottage cheese with a fork and rub through a sieve. Scoop out the pulp from the avocado with a spoon, mix with cottage cheese, and turn into a paste using an immersion blender. Wash and dry the greens, remove the stems and chop the leaves very finely. Salt and pepper the curd mass, add herbs to it, mix and place in the prepared avocado halves. Place in the refrigerator for 15-20 minutes, then serve. This type of holiday snack cannot be prepared in advance and for future use.

You can also stuff lavash and even pasties with curd mixture with added herbs. But that's a completely different story. Write also your options for using cottage cheese with herbs, we will be very grateful.

Classic cottage cheese dishes are sweet, with sugar, jam, dried apricots and raisins. However, the options for using the product are not limited to them. Salty, spicy snacks and fillings are also prepared from high-quality, most often homemade, cottage cheese.

To obtain a paste-like mass, mayonnaise of varying degrees of fat content is used. It is this that, among other things, smoothes out the sharpness of garlic juice, and if the sauce includes mustard or its oil, then the dishes acquire a completely indescribable flavor.

Cottage cheese with herbs and garlic - general principles of preparation

• Cottage cheese with herbs and garlic – a homogeneous, slightly spicy curd mass. To bring its main components to the required, uniform state, you may need a blender (immersion or with a bowl). In the absence of this kitchen processor, you can take the most ordinary meat grinder with a very fine grid or a rare metal sieve.

• In most cases, such a dish is not subjected to any heat treatment, an exception may be the use of curd mass to fill pies fried in a frying pan. Therefore, all products for cooking should be taken only when fresh.

• Cottage cheese is the basis of such a dish. Its consistency, graininess and fat content do not play a special role. Everyone can choose the one they prefer. But it should be noted that the fattier the cottage cheese, the easier it is to stir and the easier it will be to spread the mixture on bread or vegetables. Therefore, sour cream or mayonnaise is added to low-fat, and low-fat for a dietary dish is blended with a blender.

• You can add any greens - dill, parsley, cilantro, mint, basil, etc. It all depends on the type of dish being prepared and personal preferences. It is not advisable to add green onions - the dish may taste bitter.

• The homogeneous curd mass is adjusted to the desired taste by adding salt and seasoning with black pepper.

• Cottage cheese with herbs and garlic can also be served as an independent dish. This mass is spread on slices of bread, crispbread, fresh or fried vegetables (zucchini). With it you can make Turkish unleavened pies from thin pita bread. It is also perfect for stuffing fresh vegetables (tomatoes) or filling holiday profiteroles. It’s very simple and quite easy to prepare a festive appetizer roll with tomato pieces inside.

Protein diets in their variety are widely used for weight loss.
This is a shock method for correcting extra pounds in a short time. Protein diets have their supporters and opponents, as well as their advantages and disadvantages. When choosing a special type of protein diet for yourself, you need to focus on the healthiest products, for example, cottage cheese. The cottage cheese diet is usually well tolerated by the body, especially if you pursue the goal of losing a few kilograms and stick to the diet for a short time.

Why cottage cheese?

The product obtained by fermenting milk is called cottage cheese and is highly valued by both chefs and nutritionists. Among dairy products cottage cheese is perhaps the richest in nutrients. It is interesting that cottage cheese will find a place both in the diet of a person losing weight, and in the diet of someone who, on the contrary, needs strength (children, pregnant women, people after serious illnesses). cottage cheese either if you have diabetes or heart, liver or gall diseases. On the contrary, it is included in such dietary tables as for ulcers and gastritis, hypertension. It's time to rely on the cottage cheese diet if you are planning to lose weight.

Systematic consumption of cottage cheese allows you to provide the body with a lot of useful substances:

  • milk protein - it is especially well absorbed from cheese or with the lowest fat content; it is a protein of animal origin, but it is much easier to digest than meat, and it contains many amino acids essential for the human body;
  • calcium and phosphorus - must certainly enter the human body, since they participate in the formation of bone mass;
  • salts of potassium, sodium, magnesium - these elements provide all the vital processes of the cardiovascular system (conduction of cardiac impulses, myocardial contraction, ensuring the elasticity of blood vessels, reducing blood viscosity, ensuring the metabolism of the heart muscle and supplying it with energy);
  • vitamin A - useful for vision, skin health, as well as for the formation of immunity from many diseases;
  • B vitamins - without them, metabolic processes, in particular the absorption of proteins and carbohydrates, will quickly be disrupted;
  • Vitamin D - good for the health of the musculoskeletal system.

Just 300 grams of cottage cheese will satisfy a person’s daily need for protein, which is a formative element of our cells and tissues. Due to the regular intake of protein into the body, it is possible to form strong muscles, although this also depends no less on sports training.

Cottage cheese goes well with a wide variety of foods. Desserts, snacks are prepared from it, added to salads and baked goods, etc. By definition, the cottage cheese diet cannot be boring and monotonous, although it is classified as an unbalanced diet. The ratio of macronutrients in it is disturbed in favor of the predominance of proteins.

For the cottage cheese diet, you need to choose only the highest quality product. In the case of cottage cheese, the criteria will be:

  • homogeneity of structure,
  • from white to light milky color,
  • rich, pleasant aroma (no pronounced sourness),
  • delicate, soft, neutral taste (again, sourness or saltiness are assessed negatively).

Pros and cons of the cottage cheese diet

So, the benefits of cottage cheese are beyond doubt. This product should be included in every person's diet. Cottage cheese cottage cheese partly depends on their amount . The less fatty the cottage cheese , the more the proteins contained in it are absorbed. At the same time, saturated fatty acids from natural fresh cottage cheese will also benefit your health.

Cottage cheese with a fat content of more than 15% is full-fat cottage cheese , with a content of about 9% is semi-fat. If cottage cheese contains less than 3% fat, it is low-fat, and if fat is completely excluded, then the product is low-fat. Of course, the calorie content of cottage cheese is directly proportional to the concentration of fat in it. And, of course, for the cottage cheese diet you need to choose a low-fat product. While the calorie content of 18% cottage cheese is estimated at 230 kcal per 100 grams, the same portion of low-fat cottage cheese will supply the body with 71 kcal. In addition to cottage cheese , which is the basis of the diet, it involves eating lean meats, fresh vegetables and fruits.

The advantages of the cottage cheese diet are provided by the benefits of cottage cheese:

  • this is an excellent type of fasting diet for several days - it manages to normalize metabolism and cleanse the body;
  • this is a pleasant diet, during which you will not encounter a feeling of hunger - this is a plus of all protein diets, protein is very satiating, but also requires energy for its absorption;
  • the metabolism of fatty acids and fat deposits is normalized - due to calcium and methionine, the latter is also useful for the healthy functioning of the liver;
  • the skeleton and muscle frame are strengthened - many diets weaken you, but protein diets make you stronger; calcium and phosphorus, vitamin D strengthen the musculoskeletal system, and essential amino acids are involved in the construction of all cells of our body, including muscle cells;
  • the diuretic effect is explained by the effect of calcium salts, and therefore it is necessary to maintain an active drinking regime - as a result, toxins are removed from the body, and such are formed in any body, especially one losing weight, where fat reserves are disintegrating;
  • The cottage cheese diet helps restore nerve fiber and regenerate its sheaths - your nerves will become stronger, and you won’t want to “seize” any consequence of stress.
  • The disadvantage of the cottage cheese diet has already been mentioned. This is a protein mono-diet. Of course, they try to diversify it with other products, but the more there are, the less effect can be expected. A fasting diet on cottage cheese for 1-2 days can be comparable in results to a full diet, where low-fat cottage cheese is mixed with vegetables/fruits/chicken breast. going on a strict diet of cottage cheese for more than 5-7 days. If in the first days the metabolism is corrected, then over time it becomes distorted and irreversible changes run the risk of developing.

Types of cottage cheese diet

Of course, there is no such cottage cheese diet, during which you would have to eat only cottage cheese. The most strict version of the cottage cheese diet is for 2-3 days, and it allows some other dairy ingredients and even fruits. Other types of cottage cheese diet involve the use of both plant and cereal components of the menu. We will also tell you about the menu for the four-week cottage cheese diet; it is very varied, but you must follow it strictly. Most cottage cheese diets do not last more than one week.

Cottage cheese diets are distinguished by duration:

  • For a three days
  • allowed foods throughout the entire period – cottage cheese, milk or kefir, apple;
  • The daily intake of cottage cheese is 200 grams of fatty or 400 grams of low-fat cottage cheese in 5-6 divided doses (need to be divided into equal portions and eaten every 2-3 hours);
  • the daily norm of milk or kefir is 1-2 glasses;
  • You can eat one large apple per day, but you can do without it;
  • an active drinking regime involves drinking 1.5-2.5 liters of liquid (unsweetened teas, plain water);
  • for seven days
  • Among the permitted products are bran and oatmeal, some fruits and vegetables, and sometimes boiled lean meat (no more than 100 grams per day);
  • breakfast is cottage cheese with fruit;
  • lunch - also cottage cheese, to which you can add dried toast, a slice of brisket, tomato, cucumber;
  • dinner - again cottage cheese, but without bread and especially meat;
  • Apples can be used as snacks;
  • you need to remember the same drinking regime - 1.5-2.5 liters of liquid per day;
  • for four weeks
  • not so much a diet as a unique eating style with an emphasis on cottage cheese; a variety of healthy foods is allowed;
  • cottage cheese is consumed daily only for the first two weeks, and then not in every meal, but only for breakfast, and sometimes twice a day;
  • The last two weeks are aimed at mastering the principles of healthy eating.

Cottage cheese When following a cottage cheese diet, it is preferable to choose low-fat or completely low-fat cottage cheese. It must certainly be fresh, and preferably homemade. Upon completion of the diet, you should not forget about such a valuable product as cottage cheese, but include it in the diet along with other components. At the same time, ending the cottage cheese diet should not represent a sudden abuse of foods that you moved away from during the diet. It would be advisable to have oatmeal for breakfast, and for lunch and dinner avoid fatty, heavy, “unhealthy” foods.

Delicious breakfast of cottage cheese for weight gain

Cottage cheese is an indispensable product for men and women who want to gain muscle. The protein concentration in it can reach 20%, which is even more than in meat. The convenience of this protein source is that you can choose the fat content that suits you while gaining lean muscles. These are not all the benefits:

  • digests faster than legumes and meat;
  • normalizes digestion without causing discomfort;
  • brings long-lasting saturation;
  • fills with vitamins and minerals.

The protein component is represented not only by casein, but also by other types:

  • 45% - casein. It is slowly absorbed, it is this that gives satiety for 5-7 hours;
  • 40% - whey, absorbed faster;
  • 15% is hydrolyzed, the body absorbs it almost instantly.

Among others, the amino acid methionine is present, it helps to optimally process fats. There are many recipes based on this product, useful in all respects.

Curd

This is perhaps the easiest of all the recipes, an easy way to get about 250 calories. Mash with a fork 150 g of cottage cheese 9% and 20 g of butter, 100 g of fat sour cream and 30 g of raisins. Mix everything well and breakfast is ready. If you want to increase the energy value, you can add nuts.

Protein smoothie

Reminds me of melted ice cream. Mix with a blender 200 ml of kefir and 100 grams of cottage cheese, a glass of frozen strawberries. The more berries, the thicker the cocktail will be; you can drink or eat it with a spoon. If this is not enough calories, you can add a scoop of protein powder. The brightness of the aroma will be emphasized by cinnamon.

Protein-carbohydrate cheesecakes

Suitable as a first meal and as a snack. Grind one banana and a pack of cottage cheese, add an egg and a tablespoon of flour. Make cheesecakes from the dough and fry them for a few minutes on each side until a crust appears. Despite the lack of sugar, they come out sweet as the natural sweetness of the banana is enhanced by roasting.

Toast paste

The best time for toast is before lunch, with this pasta they will become a very nutritious breakfast. For 150 grams of cottage cheese you need the pulp of half an avocado, a couple of spoons of sour cream, half a glass of finely chopped herbs, a few drops of lemon juice. If this is not enough, then you can increase it without changing the proportions. Grind all the ingredients and mix, add lemon juice along with the avocado, otherwise the pulp will darken. You can add any spices to the paste, either during cooking or after spreading.

Lazy dumplings

A heartier alternative to traditional lazy dumplings. You need 250 g of cottage cheese 5%, two eggs, 8 tablespoons of oatmeal, a pinch of salt, you can use a little sugar if desired. Roll into a sausage and cut into about 15 pieces. Boil water, add salt and add a spoonful of vegetable oil. Immerse the dumplings in boiling water and cook for three minutes after floating.

2. Cut the peel from the cucumber in a thin layer, cut it into thin rings and add to the mashed cottage cheese.

3. Press the garlic here with a garlic press, add chopped young dill and add salt to taste.

4. To make the curd mass homogeneous, beat it with a blender. The whipping time depends on the power of the device and does not take more than three minutes.

5. Spread the prepared curd mixture with herbs and garlic onto the bread, and place sprigs of dill on top.

5. To remove excess oil from the pies, place them from the frying pan onto a disposable towel (for 2-3 minutes) and only then onto a plate.

How to cook cottage cheese casserole without sugar

Ingredients:

  • Cottage cheese – 400 g
  • Chicken egg – 3 pcs.
  • Banana – 2 pcs.
  • Vanillin - to taste
  • Sour cream - to taste

Preparation:

You will need a minimum of ingredients for sugar-free cottage cheese casserole. The sweetness comes from bananas, so the fruit must be very ripe. For flavoring I used vanilla essence. If you have natural vanilla, then it is better to take it. The eggs in the photo weigh about 62-65 grams each. My shape is round, measuring 20 cm.

You can (optional) add raisins or, for example, cinnamon to this cottage cheese casserole.

Divide the eggs into whites and yolks.

Place cottage cheese, bananas, chopped with a blender (or fork) into porridge, vanilla and yolks into a bowl. Whisk everything together.

In a separate bowl, beat the whites for 4-5 minutes. They should hold their shape perfectly and if you turn the bowl over, the whites will remain in place.

Stir the whipped egg whites into the curd mixture. You can’t lay out the whites all at once; you need to do this in about 3 batches.

Simply stir in the first third of the whites to make the dough a little thinner and softer. Stir in the remaining two-thirds (one at a time) quickly and carefully, moving from the edge of the bowl, down to the middle, and at the same time turning the bowl.

Line the bottom of the mold with baking paper. It is also convenient to line the edges with paper or grease them with butter and sprinkle with flour or finely ground breadcrumbs.

Place the curd mixture into the mold.

Place the future casserole in an oven preheated to 180 degrees for about 30-40 minutes.

Like all soufflé-type products, this casserole rises very beautifully during baking and settles afterwards. But no need to worry! It remains very tender, juicy and tasty!

I always serve cottage cheese casserole without sugar with sour cream and, for example, honey. I also really like to grind strawberries frozen in the summer in a blender with the addition of honey or maple syrup. Bon appetit and delicious casserole!

Appetizer of cottage cheese with herbs and garlic in tomatoes

• 2–3 sprigs of fresh basil;

• 100 gr. 18% fat cottage cheese;

• ground black, or a mixture of peppers;

• 1 tsp. sour cream 20% and mayonnaise;

• two sprigs of dill;

• five firm, ripe tomatoes of the same size.

1. Rinse the dill and basil leaves under the tap and dry thoroughly to remove any remaining water.

2. In a bowl with cottage cheese, place medium-sized chopped greens and garlic, crushed through a press. Stir, grind twice using the finest grinder grid, and season with mayonnaise mixed with sour cream.

3. At your discretion and taste, add fine salt, season with pepper and mix well again.

4. Rinse the tomatoes with cold water and wipe them dry with a towel. Cut each tomato in half with a sharp knife, cutting in the middle with a zigzag, and make two “tulips” out of each tomato. Using a spoon, scoop out the pulp from the middle and fill the empty space with cottage cheese and herbs.

Berry Easter from cottage cheese with erythritol

For those who plan to count calories during the holidays, this recipe is more suitable. It is also simple, tasty, without sugar and eggs, but the sugar substitute here has zero calories - erythritol. Why him? Because erythritol tastes similar to the sugar we are used to, it has no foreign flavors, and is also heat-resistant (does not change its properties either when cooled or heated).

Products for 1 standard bean box:

  • 200 g cottage cheese
  • 3 tbsp. butter
  • 3 tbsp. sour cream (10% fat)
  • half a glass of pitted cherries
  • 3-4 tbsp. erythritol.
  • any decor is optional.

Cooking process:

In this recipe, you first need to prepare the cherries. Of course, in the spring it can only be frozen from stock. Or imported foreign, bought in some large supermarket. The berries need to be allowed to thaw and the seeds removed. Place everything in a saucepan and add erythritol. Let's put it on gas. Our goal is to boil the cherries.

Then we do everything as in the previous recipe - mix all the ingredients until smooth. It’s more convenient to use a blender.

We prepare a container suitable for the bean and line it with gauze folded in 2-3 layers. We transfer our bright, appetizing mass there. Cover the ends with gauze, put pressure on top, and place in a deep bowl in the refrigerator.

Then all that remains is to carefully extract this beauty and delicacy, decorate it and you can celebrate!

Fried zucchini with cottage cheese, herbs and garlic

• small young zucchini – 2 pcs.;

• several sprigs of dill and parsley;

• four tablespoons of white flour;

• 100 gr. 15% sour cream;

• three cloves of garlic;

• medium-sized beets.

1. First prepare the zucchini batter. To do this, beat the eggs well with a small amount of salt (literally a pinch). Add flour and beat well again. The batter should be homogeneous, without any flour lumps.

2. Wash the zucchini, dry it lightly and cut into thin rings. It is advisable that the thickness does not exceed 0.6 cm. Then dip each circle in batter and fry in well-heated vegetable oil on both sides.

3. Grind the cottage cheese through a fine metal sieve. Squeeze the garlic into it, add carefully chopped young dill and parsley (without stems), add salt and stir thoroughly.

4. Separately, use a fine grater to grate the carrots and beets and squeeze the juice out of them. Divide the curd mass into two parts. Mix one with two tablespoons of carrot juice, and the second with the same volume of beetroot.

5. When the zucchini has cooled completely, arrange it on two large, flat plates on lettuce leaves. Grease some of the zucchini with pink curd mass, and the rest with yellow.

6. You can make an original design of the edges. To do this, place the remaining multi-colored mixtures in a pastry bag and squeeze the yellow mixture around the edges of the pink one, and the pink mixture around the edges of the yellow one.

Original roll with tomatoes, cottage cheese, herbs and garlic

• two firm ripe tomatoes;

• tablespoon 72% mayonnaise;

• 250 gr. cottage cheese, without grains;

• a bunch of fresh dill;

• two small cloves of garlic;

• 2-3 fresh mint leaves.

1. Rinse the mint leaves and dill sprigs under cold running water and wipe dry with a towel. Tear off the rough stems from the dill and chop the greens as finely as possible. Grind the mint leaves in the same way, but separately.

2. In a deep enamel bowl, mix cottage cheese with chopped mint, mayonnaise and finely grated garlic. Season with pepper to your taste, add a little salt and mix thoroughly again.

3. Place the curd mass on a large sheet of foil or cling film and spread in an even centimeter layer. Scatter finely chopped dill evenly over it, and in the center place a wide strip of tomatoes cut into small pieces.

4. Lifting the laid out layers together with the foil, wrap the roll. Make sure that it does not curl up like a snail and that the filling does not fall out around the edges.

5. Do not remove the foil from the roll, carefully wrap its edges and put the “package” with the roll in the refrigerator for a couple of hours to harden.

6. To serve, remove the “packaging” and cut the cottage cheese roll with tomato filling into even pieces.

7. Serve on lettuce leaves lined the bottom of a shallow dish.

Cottage cheese with herbs and garlic - cooking tricks - useful tips

• Fresh cottage cheese is always white. Too oily or homemade may have a characteristic, slightly yellowish tint.

• A quality product that is not too lumpy or dry, but does not contain excess whey.

• Stale, expired cottage cheese has a faint musty odor and is slimy. It tastes very bad.

• Be sure to wash all greens thoroughly and pat dry. Remaining water should not get into the dish being prepared, otherwise it will quickly spoil.

• It is better to use fine salt. Its crystals will disperse better throughout the curd mass, and it will be salted more evenly.

• Before twisting in a meat grinder, it is advisable to grind excessively grainy cottage cheese through a sieve; the mass will be more homogeneous.

This product has wonderful taste; you can also prepare various dietary dishes from cottage cheese for weight loss. In addition to taste, it has a number of beneficial properties for the body. The process of preparing cottage cheese allows you to extract the most useful components from milk.

This product is indispensable for a person who leads a healthy lifestyle. By consuming this fermented milk product, you can strengthen your hands. It is especially important to consume cottage cheese for children whose bones are just forming. It is no less important for pregnant women, since during this period it is necessary to maintain bones and teeth. It is important to use this product in the diet of those people who have kidney disease, cardiovascular disease, and problems with the digestive tract.

How to use cottage cheese for weight loss?

Many girls want to lose weight by eating cottage cheese, since this particular product is nourishing, tasty and healthy. By following a cottage cheese diet, you can quickly get rid of extra pounds. But at the same time, everyone should not forget about physical activity. Moreover, during the period of losing weight there will be no feeling of hunger, which means unnecessary nerves and breakdowns. There are many diets using curd products.

This could be a short-term diet, or a transition to a healthy diet. It is recommended to use curd products not only on a diet, but also to spend fasting days on this product. Such days can be spent after some holidays, during which the stomach was overloaded. To make the effect more visual, you can use low-fat cottage cheese. Thus, the calorie content of the product will be reduced. At the same time, thanks to it, metabolic processes in the body will be restored. Another advantage of such a diet is the saturation of the body with useful substances and calcium. Based on this, losing weight with cottage cheese is quite possible. Moreover, bones, nails and teeth will be strengthened.

Choosing cottage cheese for a diet

If you decide to eat cottage cheese for weight loss, you need to know which product to choose. Usually on store shelves we choose one of the following products:

  • Grain cottage cheese. Nutritionists consider it the most easily digestible. It is recommended for use by athletes, bodybuilders, and people with heavy physical activity. Neutral acidity allows it to be consumed by people with stomach diseases. This is the ideal cottage cheese for weight loss.
  • Low fat. It is made from skim milk. This product is quickly absorbed by the body, but scientists believe that long-term consumption of low-fat cottage cheese leads to deterioration in human health, in particular to brittle hair, nails, and tooth loss. The lack of fat in this product makes it not the best choice for diets lasting more than 2 days. If you want to do a fasting day, you can choose a low-fat product to eat on that day.
  • Curd. This is carefully ground cottage cheese with the addition of pieces of dried apricots, raisins, prunes, zest, flavorings, sugar and butter. The usefulness of this product is not inferior to classic cottage cheese, since it does not undergo any additional temperature treatment. Many people prefer curd mass to cottage cheese for its taste. The fat content of this product depends on the fat content of the cottage cheese on which it is made. If you choose this product for dietary nutrition, choose a mass of 4-6% fat content.

A cottage cheese diet will give maximum results and benefits for the body if you choose a product with a fat content of 4-5%. Low-fat cottage cheese will deprive your body of essential fats, and too fatty cottage cheese will not give the expected effect.

Cottage cheese at night for weight loss

Most women are interested in the question: is it possible to eat cottage cheese when losing weight at night? Most people believe that eating food at night will lead to excess weight. But if you eat the right foods at night, you can get rid of excess weight and hunger. Everyone knows that growth hormone and insulin are produced during sleep; such components will help a woman lose weight. Based on this, you need to eat certain foods before going to bed. As it turned out, the curd product is ideal for this role. It is well absorbed by the body and provides it with a portion of essential vitamins. The only rule that needs to be taken into account is that cottage cheese for dinner when losing weight or any other food should be eaten 3 hours before bedtime.

Is cottage cheese good for breakfast?

Previously, the hours of consumption were not given importance; many still eat it arbitrarily, without thinking about whether it is right or wrong. It was believed that the beneficial properties would be beneficial at any time of the day. Now there are other opinions on this matter.

If we are talking about whole or homemade, then it is better to eat it before lunch. Benefits of early use:

  • it will be easier for the gastrointestinal tract to digest it;
  • the pancreas works more actively than in the evenings, so protein foods are processed faster and of better quality;
  • suitable for those who train intensively and do physical work, especially if it is problematic to take a break during the day for a full meal;
  • milk protein, casein, is processed for 4-6 hours, gradually breaking down into amino acids. After consumption, a person feels full for a long time, this is important before the start of the working day;
  • the wealth of mineral and vitamin content has a positive effect on the state of immunity, mental and sports productivity.

Benefits do not apply to individuals with milk protein intolerance. Casein is not absorbed by them, it does not bring any benefit, only harm.

Some experts claim that consuming all dairy products increases the amount of mucus in the nasopharynx, bronchi and lungs, which leads to disturbances in their functions. Supporters of this hypothesis insist that cottage cheese should be eaten in the first half of the day, but not on an empty stomach or at night. They claim that the digestion is not able to absorb it in the afternoon. There is a popular saying that confirms this version. It says that cottage cheese is gold in the morning, silver in the afternoon, and lead in the evening. There is no more serious scientific evidence.

Have you tried cottage cheese with herbs? This is a light, summery, fresh dish. It does not require heat treatment, which is important for hot summer days.

It doesn't require a lot of time, which is also very nice. It is healthy because, in addition to cottage cheese, it is prepared from fresh herbs and vegetables. It can be a decoration for the holiday table. In general, I recommend it!

I don’t write down the quantity of ingredients, everything here is prepared based on inspiration, from what is in the refrigerator at the moment. Of course, this recipe is suitable for the Dukan diet (Cruise), and, as I usually write, for all lovers of healthy eating.

The original versions of the recipe use mayonnaise so that it is not dry. Reading the composition of mayonnaise on the packaging, one gets the impression that there is nothing edible there, so mayonnaise is a waste of time! On Dukan, mayonnaise in a recipe can be successfully replaced with soft cottage cheese or kefir. And if you are not on a diet, then you can use sour cream.

How to season cottage cheese on a diet. Diet options

There are different ways to lose weight using cottage cheese. They can be divided into three main methods:

  • Every week, arrange fasting days with cottage cheese.
  • Stick to one of the mono-diets.
  • Eat it as part of a correct and rational menu.

Diet options are varied. The most popular and effective are the following:

    The cottage cheese mono-diet or fasting days are good enough for a person. But they can last no more than 3 days. During this time, you are allowed to eat half a kilogram of cottage cheese and drink kefir.

Divide meals into 5 approaches. To drink, use rosehip infusion, still water or green tea.

  • The curd-kefir diet lasts about 5 days. As its name implies, these are the main products during this time. You need to eat five times a day. For one meal you should eat 100 g of low-fat cottage cheese and a glass of kefir. So, in a day, almost half a kilogram of kefir will go away. You can drink brewed herbs, mineral water, green tea without sugar.
  • The curd and fruit diet lasts about a week. During this time, a person eats 400 g of the product. It is important to add wheat dietary fiber to cottage cheese, as it improves digestion and metabolism. They need to be brewed with boiling water to make the beneficial substances more edible and more accessible. You can add berries and pieces of fruit, honey to cottage cheese, and also mix it with vegetables in salads.

Preparation

The cottage cheese needs to be thoroughly mashed with a fork. Add finely chopped herbs and garlic, salt, pepper and spices to the cottage cheese. If it turns out dry, add a little kefir. Vegetables – cucumber, tomato, pepper (after removing the seeds) – cut into slices. Place cottage cheese on each circle or leaf of lettuce with a spoon, and our dish is ready! Or you can take oat bran bread instead of vegetables - you’ll get a great sandwich for breakfast.

As you can see in the photo, this light summer snack made from cottage cheese has a lot of scope for creativity, because you can decorate cottage cheese with herbs as your imagination or mood dictates!

A snack of cottage cheese with herbs and garlic is, in fact, a slightly modernized meal for the jocks. There is a lot of protein in it, vitamins too, zero carbohydrates, you can eat as much as you like. Preparation takes about 5 minutes, the price (if the greens are in season and the cottage cheese is low-fat) is 3 kopecks.

I once had an acquaintance visiting me - a poet from Krivoy Rog. I’m a hospitable host, I fried the veal, heated up the borscht, we drank the second one, then again the second one... And then I saw that the guy wasn’t taking a bite. What's the matter? Is the meat not tasty, is the borscht not beautiful? It turns out that the comrade is a vegetarian, but he wants to eat - he’s afraid, but he’s embarrassed to admit it. I go to the freezer - there is only ice, in the refrigerator - cottage cheese, herbs and a couple of garlics. Anyone else in my place would have given up, but I came up with this recipe. I’ll tell you a secret, there was some meat left over that evening, but this cottage cheese appetizer on sandwiches was swept away.

I decided to repeat the recipe and take a photo especially for the readers of The Rum Diary.

Curd snack with herbs: ingredients

To prepare the dish you will need:

Any will do, not necessarily fresh. With a low-fat version, the snack will be dietary, but it is more difficult to stir; with a fatty version, it will be more expensive, easier and tastier, since fat is a flavor enhancer. My version today is 0% cottage cheese.

You can add everything except green onions (they make the dish bitter). I have cilantro, parsley, green basil, dill. The good thing is that in a blender you can even grind stems, withered, stale greens - everything that is usually thrown away. Adding a couple of mint leaves would go very well with the theme – just not more!

It all depends on your taste, you can add more, or you can leave it out at all.

Lemon goes well with mint, but the snack turns out quite tasty without it.

If the cottage cheese does not mix well in the blender, does not break up, or is too viscous, you can add to it: tomato, bell pepper, cucumber. If it’s not the season - a little mayonnaise (1 tsp) or even vegetable oil - then our cottage cheese snack on a sandwich will spread better and be easier to mix.

Curd honey Easter with raisins

I'll start with my favorite option - Easter from cottage cheese with honey. Yes, the calorie content of such an Easter egg will be higher than that of the following ones. But the food is excellent, and cheat meals have not been canceled! Moreover, not everyone loses weight with proper nutrition; many have a different goal - to maintain health and energy.

Ingredients for 1 small bean bag:

  • cottage cheese - 250 g
  • sour cream 10% fat - 0.5 tbsp.
  • butter - 1 tbsp.
  • liquid honey - 2 tbsp.
  • raisins – 50 g
  • confectionery topping - optional

Cooking process:

First of all, you need to pour boiling water over the raisins. This will soften the dried grapes, they will be juicier and easier to wash later. Pour boiling water over raisins for 10 minutes. Then transfer to a colander and rinse under running water.

Let the liquid drain and place the prepared raisins on a paper towel to dry.

While the raisins are soaked in boiling water, mix cottage cheese with sour cream. It is important to do this so that the mass becomes homogeneous. The easiest way is to use a blender, but if you don’t have one, then rub the cottage cheese through a sieve 2 times, and then add the rest of the ingredients.

Next you need to melt the honey. If you have liquid honey, great, but in the spring it is almost impossible to find natural, uncandied liquid honey. Honestly, I don’t know what type of honey can “survive” until April-May in a liquid state. Do we have any experts here? Are there such varieties? In general, for now, let’s melt regular honey by placing the bowl with it in a bowl of hot water. We will not use the microwave in order to preserve as much as possible all the benefits of this wonderful natural sweetener.

Add liquid honey to the curd mixture, mix and taste to see if there is enough sweetness for your taste, if not, add more honey.

Now add the raisins and mix well again.

All that remains is to form Easter. This can only be done with a special form. Don't have a bean bag? In normal home conditions, you can adapt any plastic container by making holes in the bottom. Or use a metal sieve with fine mesh.

Fold clean gauze soaked in water in half or three. Line the container with this gauze. Why does the cloth need to be wet? Because it’s easier to handle it this way, it will lie more evenly, which means our little dog will turn out more neat.

So, we lined it with gauze, transfer the curd mixture. Tap the mold on the table a couple of times to compact the curd. Now lift the edges of the gauze, covering the top of the cottage cheese. We place the oppression on top, and the bean bag itself in a deep plate. This is a guarantee that the released whey will not spread throughout the refrigerator. The dessert needs to be cooled for at least 5 hours; it is better to put it in the refrigerator overnight.

Then we disassemble the Easter box, remove the gauze, turning the Easter over onto a plate. We decorate according to our own taste. You can also attract children.

Happy Sunday to you!

Cottage cheese snack with herbs: step-by-step photo recipe

To prepare, we need a blender, a food processor, or at least a meat grinder or mixer to grind the cottage cheese well.

1. Cut the garlic into 4 parts and throw it into a blender.

2. We also send washed, dried and coarsely chopped greens there.

3. Salt (the mixture will grind better with salt) and chop as finely as possible.

4. Add half the cottage cheese and stir.

5. If necessary, add salt, add the juice of one lemon slice (if you want), add the rest of the cottage cheese and mix thoroughly again.
