Cake with banana and cottage cheese - basic cooking principles
There are many recipes for cake with banana and cottage cheese. Dessert can be light or, on the contrary, hearty. The cake is prepared in two ways: by baking the cakes and without baking.
The base of the cake can be sponge, puff or shortbread. The first option is most often used. For a no-bake cake, cookies are used as the base: shortbread, oatmeal or crackers.
Cottage cheese is used as a layer, or cream is made from it. To prepare it, use sour cream, sugar, powder or condensed milk. The cottage cheese must be beaten in a blender or ground through a sieve so that it acquires a homogeneous structure. Then it is ground with powder or sugar, sour cream is added and beaten until smooth.
Peel the bananas and cut them into circles. The fruit is added to the cream or laid out in layers. Bananas are also used as decoration.
For variety, nuts, chocolate, almonds, berries and other additives are used in preparation. The dessert will turn out aromatic if you add vanillin or citrus zest to the cream or dough.

- Beat the eggs with sugar, grinding the ingredients quite thoroughly.
- Add kefir and mix.
- Peel the bananas and mash them, for example with a fork.
- Add bananas to the mixture and mix thoroughly.
- Add flour and knead again. The result should be an almost homogeneous mass, quite thick, but such that it can be poured into the mold and not transferred.
- Grease the prepared baking container with vegetable oil and fill with banana mixture.
- Place in an oven preheated to 160 and bake until done (about an hour).
Tip: the almost finished pie with bananas can be topped with chocolate mixture. It's very simple to make by melting a bar of good dark chocolate in a little water. It will be good if the black sweet also comes with nuts or raisins. This will give the finished dish additional piquancy. Or you can decorate your culinary creation with fruit circles. Here is an option for what can be made quickly from bananas if the guests have already called and are almost on the doorstep. Also, such a simple dish can be suitable for evening tea or morning coffee.

- Melt butter in a frying pan.
- Place banana slices in the prepared bowl (by the way, as an option, you can cut the fruit crosswise into slices) so that they do not come into contact with each other.
- Fry over medium heat on each side until golden brown (about 2 minutes).
The result is a simple and healthy dish - banana dessert. What can be done to decorate it? Grate a bar of good chocolate and sprinkle on the finished slices. You can also serve them with vanilla ice cream: the taste goes well together.

- Then we take out the product and grease it with sour cream on top. Place in the oven and bake for another 15-20 minutes. However, for those who are afraid of extra calories, the last point can be excluded, and take low-fat cottage cheese.
The delicious casserole is ready. This is a good example of what can be made from a banana in a hurry: both quick and healthy. And finally, a piece of advice: it’s best to cool it without removing it from the foil, since it separates better when cold.
How to surprise guests
Today we have cottage cheese casserole with banana for dessert. The recipe for it in the oven is not as simple as it might seem at first glance. Moreover, we will add a twist - cherries, which we will season with cognac. And such baked goods will be decorated with “Flambé” berries.
Compound:
- 500 g cottage cheese;
- butter – 0.1 kg;
- ½ tbsp. milk;
- eggs – 4 pcs.;
- 200 g powdered sugar;
- 1 lemon;
- 4 tbsp. l. candied fruits;
- 150 ml cognac;
- 50 g chocolate;
- 3 tbsp. l. decoys.
Preparation:
- Let’s say right away that not all candied fruits are suitable for us, but only bananas, dried apricots and cherries.
- First, chop the fruits, except cherries, and place them in a deep container.
- Let's conduct a small experiment and heat the cognac to a temperature of 40°.
- Pour this fuel over the fruit and leave for half an hour.
- You will notice that during this time the dried apricots will soften significantly. The cognac can be drained and disposed of. Decide for yourself which way.
- Literally 5-10 cherries will be put aside. We will use them in the process of decorating the casserole.
- Bread the remaining pieces of fruit in semolina.
- Now the important part of the work: we separate the protein mass from the yolks.
- Beat the chilled whites with powdered sugar until a stiff foam forms.
- Tip: This process will be easier if you add a pinch of fine grain salt.
- Heat the milk slightly and combine it with semolina.
- Result: the cereal should swell.
- Now a little trick: before removing the zest from the lemon, we scald it with boiling water.
- Immediately start grating the lemon on a fine grater.
- Melt the butter in a water bath or microwave oven.
- Grind the curd mass and combine with egg yolks.
- Add semolina, melted butter, candied fruits and 1 tsp to the same mass. citrus zest.
- Mix everything thoroughly.
- Now it's time to introduce the protein mass.
- Tip: we will knead only with a wooden spatula from bottom to top.
- There is no need for sudden movements, otherwise the protein will simply settle and we will not see the desired effect.
- Now it’s just a matter of small things: bake our delicacy until ready.
- For decoration we will need melted chocolate. You can simplify the task by simply grating it on a fine grater.
- And now the highlight of our dessert. Place a small piece of butter in the frying pan, about 20 g.
- Let's literally add 1 tbsp. l. granulated sugar.
- Take the remaining cherries and mix everything.
- Take 20 ml of cognac and pour into a frying pan.
- Now let's start a fire and set fire to the cognac.
- The spectacle is simply mesmerizing. The cognac will burn quickly, and as a result we will get the coveted Flambé berries.
The dessert recipe that I want to offer is a slightly modified version of cottage cheese casserole according to GOST. I had to adjust the recipe a little to account for the addition of banana, but in the end it turned out great!
Cottage cheese casserole with banana - the simplest and most delicious recipe! You don't even need a mixer to prepare it. Moreover, to achieve the best result, I do not recommend using it at all - only your hands and a whisk!
So, in order to prepare a dietary cottage cheese casserole with banana and semolina in the oven, prepare the ingredients according to the list.
I used 0% cottage cheese and 2.5% milk, but you can choose the fat content at your discretion. I advise you to immediately buy paste-like dry cottage cheese, then you won’t have to rub it through a sieve like grainy cottage cheese. Wet, creamy cottage cheese will not do at all.
Mix cottage cheese with egg and semolina in a bowl. Don't let the photo mislead you, there is one egg, it just turned out to have a double yolk!
Add vanilla sugar and milk.
Finally, add the mashed banana and stir. You don't need to beat anything, just stir and that's it.
Pour the mixture into a mold approximately 20x20 cm in size and smooth it out.
Bake in an oven preheated to 200 degrees for about 30-35 minutes. When a golden crust appears on top, the cottage cheese casserole with banana is ready!
Cool the dessert slightly, cut into portions and serve with jam, condensed milk and various sweet sauces.
