Instead of fillets, you can use thighs, legs, legs, from which the meat should be cut and passed through a meat grinder. In this case, I don’t use skin. But if you like, you can skip the meat instead with the skin.

2. If you want to add fresh garlic, then you also need to mince it. You can also pass the garlic through a press (I don’t add garlic; children don’t really like it with garlic). But it’s better to chop fresh herbs with a knife (dill, parsley).

3. I add cottage cheese to the minced meat and onions, and add semolina. Then I beat in one egg, add salt and ground black pepper. You can also add 0.5 teaspoon of chicken spices to the minced meat (optional).

8. You can cover the frying pan with a lid and bring the cutlets to readiness, but I simmer them in a saucepan by adding a small amount of water and spices (bay leaf, black peppercorns, allspice).

From this quantity of products I got 13 small cutlets. If you make the cutlets a little larger, you can get 7-8 pieces.
