Chicken cutlets with cottage cheese: recipe

Pork cutlets are a classic, but in the modern world more and more people are trying to adhere to healthy eating habits. In this regard, preference is given to chicken as a dietary meat, which is considered less fatty and more healthy. But in addition to choosing meat when cooking, you need to pay attention to the method. For example, frying makes chicken cutlets with cottage cheese more nutritious. There are also alternative methods - cooking in the oven, slow cooker, etc.

In a steamer, slow cooker or oven?

Before you choose exactly how to cook minced chicken cutlets with cottage cheese, you need to familiarize yourself with the nuances of each method.

In a steamer

Chicken cutlets with steamed cottage cheese are an excellent dish for those who adhere to the principles of proper nutrition and watch their figure. The most dietary part of the chicken is the breast. But the minced meat will turn out a little dry. Because of this, the cooking rules change slightly compared to regular cutlets. A double boiler will keep the meat juicy and will not take away the remaining moisture from it; it will also retain a large amount of vitamins and beneficial microelements. To prepare delicious PP chicken cutlets with cottage cheese in a double boiler, you need to follow some rules:

  • It is better to make a dish from chicken fillet - where there are no bones and skin.
  • If the minced meat is not mixed thoroughly enough, it will release liquid, and the cutlets will spread and fall apart during cooking. In this regard, the minced meat should be mixed well and even beaten so that the cutlets are soft, fluffy and retain their juiciness.
  • In addition to minced chicken, add pepper, salt, nutmeg and other spices to taste. You can add piquancy with finely chopped mushrooms or even chopped pistachios.
  • In a double boiler, cutlets can be baked immediately with potatoes and other vegetables, on different tiers. The meat is placed in the lower bowl and the vegetables above it. This is an important rule so that the juice from raw cutlets does not get on the vegetables.

In the oven

Many people perceive the phrase diet food as a strict restriction in dishes. In fact, the PP menu can be even tastier and more varied than fast food, smoked food, etc. Diet cutlets in the oven will be even healthier; they are usually made from lean meat. Before cooking, the chicken fillet is turned through a meat grinder, it is recommended to do this 2 times, the second time add onions, bread and other ingredients according to the recipe for chicken cutlets with cottage cheese in the oven. The main problem with the oven cooking method is that the dish retains its juiciness. To preserve the juiciness of chicken cutlets with cottage cheese in the oven, you can use the following rules:

  • Put onions in a ratio of 1 to 3: 1 part onion to 3 parts meat.
  • The bread pulp retains moisture well, preventing it from evaporating from the cutlets. The bread is pre-soaked in water and milk. This will make the dish especially tender.
  • The minced meat must be thoroughly mixed.
  • While stirring, add a few tablespoons of cool water or milk for juiciness.
  • Before baking, grease a little with vegetable oil.
  • Cover the baking sheet with foil while cooking in the oven.
  • The main rule for preserving the juiciness of a dish is not to overcook it in the oven.

In a slow cooker

Cooking chicken cutlets with cottage cheese in a slow cooker is very simple, it does not take much time. But the end result is a great lunch or dinner for the family. Baking in this way preserves the benefits of the cutlets; they can be eaten by both children and adults. Chicken and cottage cheese cutlets in a slow cooker will turn out tender. If the dish is being prepared specifically for children, it is recommended to reduce the amount of onion in the recipe and fry a little less.

Subtleties of technology

In this article we will look at how to choose the best fish and the appropriate heat treatment method for cutlets. The following recipes will allow you to prepare a delicious dish with a small amount of calories.

All types of fish are rich in protein, the consumption of which is quite important when following a diet. It is protein that “nourishes” the muscles during regular training, gives the body energy and strength, and supports the healthy activity of the entire nervous system. Fish also contains a large amount of microelements and vitamins that are necessary for the body.

For convenience, the entire range of fish on the shelves of supermarkets and markets can be divided into 3 types:

  1. Fatty varieties. This category includes eel, mackerel, halibut, etc. They are characterized by high fat content, and dishes from them turn out to be as juicy as possible, regardless of the cooking method. However, fatty types do not fit into the concept of dietary nutrition due to their high calorie content.
  2. Medium fat varieties. This category includes trout, pink salmon and herring. Fish of this type can be periodically used in the diet, subject to two conditions: moderation (no more than once a week) and preference for dietary cooking methods (steamed, stewed, etc.).
  3. Low-fat varieties. This category is represented quite diversely: pike, hake, pollock, bream, etc. This type of fish can easily be included in the diet menu on an ongoing basis without fear of gaining weight. Due to its low fat content and rapid absorption, it can be used in medical nutrition, the diet of children and the elderly.

For dietary cutlets, cod fish varieties are best suited, the most popular of which are pollock and hake. But you can also make a dish from pike or navaga. In this case, the calorie content will be minimal, but they should not be subjected to excessive heat treatment.

Otherwise, the cutlets will turn out a little dry. If you want to make them juicier, you can add a little salmon to the dietary varieties of fish. Minced meat made entirely from red fish cannot be called low-calorie and suitable for a diet.

Note! Cutlets from large fish turn out more juicy than small fish with the same cooking method.

In a frying pan

To cook cutlets in a frying pan, you should choose dishes with a thick bottom - it will heat up more evenly, which will improve the quality of frying. Breading is of great importance for frying cutlets. If you choose white crackers, nuts, etc., the calorie content of the dish will increase.

During a diet, it is better to use a breading made from oatmeal, a small amount of flour or bran.

Frying time is approximately 3-4 minutes for each side with medium-sized cutlets. Prolonged heat treatment makes them drier and heavier on the gastrointestinal tract. The big disadvantage of cooking in a frying pan is the use of vegetable oil. In this case, the calorie content of the dish increases significantly. The best option: choose a frying pan with a non-stick coating and cook without oils, or add a little water to the cutlets and simmer them under the lid.

In the oven

This cooking option is most common during the diet period. Typically, cutlets are laid out on a baking sheet or in a special bowl and cooked without oil for 15 minutes in a preheated oven. They turn out quite juicy with a slight golden brown crust.

Important! If the golden surface of the cutlets is unacceptable in a particular diet, you can cover the cutlets with foil.

To get a tasty and healthy dish, do not overdo it with the temperature inside the oven. The cutlets should be cooked at 180 degrees to maintain a juicy texture.

In a slow cooker

Cooking cutlets in a multicooker occurs due to uniform thermal effects. The dish turns out to be quite soft and juicy even when using dietary fish. However, cutlets in a slow cooker turn out more “pale” in appearance, they have almost no crust. It is also worth considering the selected mode - frying in a slow cooker in oil is no less harmful than in a frying pan.

Use the “Stew” and “Bake” modes to prepare a healthy and low-calorie dish. Cooking time depends on the number of cutlets and the power of the device, the average period is 20 minutes.

Steamed fish cutlets are distinguished by their original taste, delicate texture and high juiciness. When using this method of heat treatment, all the beneficial properties of the fish are preserved. Also, cooking in a double boiler does not require adding oil, which significantly reduces the overall calorie content.

Steamed cutlets are the most optimal option in a diet for weight loss, menus for children and various patients with pathologies of the gastrointestinal tract and internal organs.

They can be served with any side dish. This could be rice, wheat porridge, barley, buckwheat, pasta, mashed potatoes or chopped vegetables. The ingredients needed to prepare the dish are simple.

The composition includes minced chicken, onion, egg, cottage cheese. You can use store-bought or homemade cottage cheese. I tried with different cottage cheese, different fat content, but not less than 5%.

Bread the cutlets in breadcrumbs or flour before frying.

According to taste and desire, you can add any greens to the minced meat. You can sprinkle finely chopped herbs on top of the finished dish and serve with sour cream.

Chicken breast cutlets with cottage cheese - the most delicate recipe

So let's get to the ingredients. But before that, I want to note that chicken fillet cutlets with cottage cheese turn out tender, even when made from frozen chicken breast.

  • Chicken fillet – 500 grams
  • Cottage cheese - 200 grams
  • Onion - 1 pc.
  • Chicken egg - 1 pc.
  • Salt - 0.5 teaspoon
  • Semolina - 2 tbsp. spoons
  • Garlic to taste and optional
  • Ground black pepper to taste
  • Any greens as desired

Sunflower oil for frying.

A little flour or crushed breadcrumbs for coating the cutlets.

We have the recipe in print and a video recipe. In the video I prepared 1 kg cutlets. chicken fillet, therefore we increase all ingredients by 2 times.

Also in the video I use full-fat, homemade cottage cheese, and in the recipe with step-by-step photos, store-bought cottage cheese is 5%.

Cutlets with cottage cheese - preparation

First you need to prepare all the necessary ingredients. I took chicken fillet. We bought homemade chicken at the market, cut it into pieces, and separated the fillets. Chicken pieces were marinated in kefir, and cutlets were made from the fillet.

But you can, for cutlets, buy ready-made minced chicken in a store or market.

Instead of fillets, you can use thighs, legs, legs, from which the meat should be cut and passed through a meat grinder. In this case, I don’t use skin. But if you like, you can skip the meat instead with the skin.

2. If you want to add fresh garlic, then you also need to mince it. You can also pass the garlic through a press (I don’t add garlic; children don’t really like it with garlic). But it’s better to chop fresh herbs with a knife (dill, parsley).

3. I add cottage cheese to the minced meat and onions, and add semolina. Then I beat in one egg, add salt and ground black pepper. You can also add 0.5 teaspoon of chicken spices to the minced meat (optional).

It is better to take cottage cheese that is not sour, otherwise the finished cutlets may have a sour taste. If you buy cottage cheese at the market, be sure to try it before

You can grind the cottage cheese through a sieve, but I don’t do this; on the contrary, I like it when there are pieces of cottage cheese in the cutlets.

To be honest, the children liked the cutlets made from village (homemade) cottage cheese more.

Instead of semolina, you can add a piece of white bread or loaf to the minced meat, soaking it in water or milk. Then pass the piece through a meat grinder or grind it with a blender. I use semolina in this recipe.

4. I knead everything with my hands. My mixture was not sticky or runny, but not thick either.

You can leave the minced meat for 5-7 minutes so that the semolina swells a little.

5. Now we should form and fry the cutlets. You can form round or oblong cutlets. You can wet your hands with cold water and start forming the cutlets.

6. Before frying, they should be rolled in breadcrumbs or flour, I use flour. You can also bread the cutlets in corn flakes, which must first be crushed.

7. Pour vegetable oil into the frying pan and place the cutlets. Fry until golden brown on both sides over medium heat.

Can be steamed or baked in the oven.

8. You can cover the frying pan with a lid and bring the cutlets to readiness, but I simmer them in a saucepan by adding a small amount of water and spices (bay leaf, black peppercorns, allspice).

From this quantity of products I got 13 small cutlets. If you make the cutlets a little larger, you can get 7-8 pieces.

Chicken fillet cutlets with cottage cheese are delicious both warm and cold. Our children love to top them with sour cream, so they turn out even tastier and more tender.

And this is what the cutlets look like in cross-section.

You can combine the dish with fresh vegetables or various pickles (cucumbers, tomatoes, zucchini, eggplant, etc.) Or you can serve it with porridge, pasta or potatoes. You can generously sprinkle fresh finely chopped herbs on top.

Children and adults like these cutlets because of their unique taste, tenderness, softness and juiciness.

And if you still have questions, then I suggest you watch the video recipe for making chicken cutlets with cottage cheese.

  • one onion;
  • 2 small green apples;

A simple recipe for steamed minced fish cutlets

This recipe is the simplest and most common. In the classic version, milk is used to prepare the dish. If cutlets are made for a Lenten table, use water instead of milk, and replace the egg with a spoonful of starch.

  • fish fillet – 0.5 kg;
  • bread – 50 g;
  • onion – 100 g;
  • egg – 1 pc. (or 20 g of starch diluted in 20 ml of water);
  • milk or water – 100 ml (you can also take soy or coconut milk);
  • salt, seasonings - to taste (if you are on a diet, do not overuse spices).

Cooking algorithm:

  1. Chop the onion very finely.
  2. Rinse the fillet. Dry with napkins and pass through a meat grinder.
  3. Soak stale bread in warm milk or water.
  4. Stir in all recipe ingredients.
  5. Beat the minced meat on a board to make it denser. Form it into cutlets and steam for 20 minutes.

You can serve mashed potatoes as a side dish for steamed cutlets. Just remember that during Lent it must be cooked in water, without adding milk, cream or butter. For those on a diet, such mashed potatoes will be even healthier.

Semolina makes the cutlets more tender and fluffy. It’s just important to choose semolina made from durum wheat, otherwise the dish will not be dietary. Cheese will give the dish a soft, creamy taste, although it will slightly increase its calorie content.

  • fish fillet – 0.5 kg;
  • onions – 75 g;
  • processed cheese – 70 g;
  • semolina – 1 tbsp. l.;
  • egg – 1 pc.;
  • salt and pepper - to taste.
  1. Grind the fish fillet through a meat grinder.
  2. Grate the cheese. It will be easier to cope with this task if you keep the cheese in the freezer for a short time before doing this.
  3. Chop the onion with a knife.
  4. Mix all ingredients, adding egg and spices.
  5. Having formed small cutlets, steam them for 25 minutes.

The semolina will swell during cooking, giving the cutlets fluffiness. These cutlets taste amazingly tender, and they look appetizing. They can be served with any side dish.

This dish includes one egg, but you can do without it by slightly increasing the amount of flour. Then the recipe will become lean.

  • minced fish – 0.5 kg;
  • carrots – 150 g;
  • onion – 150 g;
  • egg – 1 pc.;
  • flour – 2 tbsp. l.;
  • dried herbs, salt - to taste.
  1. Grind the pre-washed and peeled carrots on a fine grater.
  2. Finely chop the onion with a knife.
  3. Mix the minced meat with chopped vegetables, beat an egg into it, add dried herbs, add salt.
  4. Place the cutlets made from minced meat on the grill of a steamer or microwave. Start the appropriate program (“Steaming” in the microwave, “Fish” in the steamer). Cook for 20 minutes.

Thanks to the addition of a large number of vegetables, steamed fish cutlets according to the given recipe are doubly useful.
