Charlotte in a slow cooker. Low-calorie recipe with photos.

Initially, charlotte was a sweet dessert made from apples. This dish included not only apples, but also custard, liqueurs, and white bread. So it was difficult to call this dessert dietary. But today the recipe for this dish is constantly undergoing various changes in order to adapt to the diet and proper nutrition. This is how many healthy and tasty dishes appeared, and you may well become one of these experimenters by coming up with your own personal dietary charlotte recipe.

What distinguishes a regular recipe from a dietary one?

  • Firstly, it is correctly selected flour. Nutritionists and nutritionists have long been advising to abandon the usual wheat and replace it with healthier whole grains. What will it give? You will receive much more nutrients and vitamins, and also, which is extremely important, you will introduce fiber into your diet, which must be present in your diet if you are on a diet. Whole grain flour is not subjected to such powerful processing as wheat flour, and retains all its unique properties. Some recipes allow for mixing different varieties. So you can take half the wheat flour and add half the whole grain flour, this will only make your recipe better and you will get a real dough. Pay attention to rye flour, buckwheat, oatmeal and flaxseed. The latter type of flour is ideal if you need to introduce more protein into your diet.
  • PP charlotte recipe does not contain sugar. You will have to prepare a sweet dish, but use only natural sweeteners. Remember that 100 grams of sugar contains as many as 400 calories, so any dish using this product cannot be considered dietary. Stock up on natural sweeteners - stevia or agave syrup are ideal. The calorie content of a regular charlotte is about 250 calories per 100 grams, and by eliminating sugar, you can reduce the calorie content to 120-150 calories! Agree that this is a significant difference.
  • The most important ingredient in this pie is apples. This fruit can be safely included in your diet while losing weight, because 100 grams of apples contain only about 50 calories. A huge plus of apples is that in addition to a lot of vitamins, this fruit is an ideal source of fiber. True, most of it is contained in the peel, so if you wish, you can not peel the apples, this will only make your pie more dietary. But if you are tired of apples, you can always replace them with rhubarb (the taste will be the same sweet and sour) or any berries, pears, peaches or apricots.

As you can see, in this recipe there is always room for your experiments and you can choose the ingredients and base for this dish yourself.

Historical birth of the recipe

The classic recipe for apple charlotte was borrowed from English cookbooks.
The modern apple pie recipe is slightly different from the original. Initially, the baked goods looked like fluffy apple pudding topped with various sweet sauces. For example, in Germany, charlotte was baked from ordinary bread with the addition of fruit mass and butter cream. This recipe still exists and enjoys some popularity. Over time, all apple pies made with biscuit dough began to be called charlotte.

Nowadays, cooks have simplified the recipe as much as possible. It has become more accessible, but due to its caloric content, some housewives are forced to refrain from such baking. Then inventive confectioners offered several options for dietary preparation of charlotte, replacing some ingredients.

Glycemic index

The glycemic index (GI) is an indicator that affects the flow of glucose into the blood after consumption. Moreover, it can vary depending on the cooking method and consistency of the dish. Diabetics are prohibited from drinking juices, even those from fruits that have a low GI.

There is also one more rule - if vegetables and fruits are brought to the consistency of puree, then their digital GI equivalent will increase. But this does not mean that you should completely abandon such dishes, just the serving size should be small.

When choosing products, you must rely on the following glycemic index indicators:

  1. Up to 50 units – allowed in any quantity;
  2. Up to 70 units – use is allowed in rare cases;
  3. From 70 units and above – under the strictest prohibition.

Charlotte for diabetics: recipe with fructose and without sugar in a slow cooker

For example, honey and stevia are good analogues of sugar. These ingredients are allowed even for diabetics. Dried fruits can also provide additional sweetness. Sugar-free charlotte with apples, pears and dried fruits will look no less attractive.

As you know, honey is most safely absorbed by the body and is allowed in certain proportions in the diet. You should also know that during heat treatment this product changes its properties and partially loses its benefits. Therefore, you need to be careful when replacing sugar with honey. You can add stevia or fructose to the recipe.

Kefir charlotte without sugar turns out very tasty. Fermented milk products are added to slightly dilute the coarse fiber of buckwheat or oatmeal. This should be done while kneading the flour by hand.

You can also prepare a diet charlotte with cottage cheese. This product will partially replace flour. Naturally, cottage cheese should be low-fat. This ingredient is added to the dough while kneading the flour by hand. Each housewife determines the dosage to her own taste.

Now you know how to prepare charlotte without sugar. The recipe for this dessert is in the article.

Pies with berries and fruits are especially popular. This is both food and dessert at the same time. They are tasty, juicy and sweet. But there are categories of people who, for various reasons, limit sugar in their diet. What's a sweet pie without sugar?

It turns out that anything is possible. For example, everyone’s favorite and widespread charlotte. Indeed, a very easy apple pie to make. It doesn’t require a lot of products or hassle, and it always turns out tasty and aromatic. And just such a sweet pie can be prepared without adding sugar.

The best sugar substitute without affecting the taste is honey. For those who maintain a slim figure and limit the consumption of flour, some of it is replaced with oatmeal.

The usual ingredients for making charlotte are:

  • half a glass of flour;
  • half a glass of rolled oats;
  • eggs – 2 pieces;
  • half a teaspoon of soda;
  • two tablespoons of honey;
  • apples – 3-5 pieces.

1. First you need to cook the apples. Remove the core with seeds and stalks from washed and dried fruits. Then cut into slices. Everyone chooses the thickness of the slices according to their taste. Place the chopped apples in a bowl with honey.

2. Break the eggs into a deep container, always dry and cool. Eggs should also be cold, refrigerated. Using a mixer or whisk, beat the eggs until a thick, high foam forms. To do this, it’s good to add a little salt before starting to beat.

3. Prepare a baking dish. You can use a special one with split edges, you can use a cake pan, or you can just use a non-stick frying pan without a handle, wide and deep enough. Grease the mold with margarine or unrefined vegetable oil (it’s good to distribute just a little fat over the entire surface of the bottom and sides so that there are no dry areas left).

4. Then pour the dough into the prepared pan, place the apples on top, pour over them with the honey in which they lay for soaking. And place in the oven, preheated to 170 degrees. Leave to bake for about half an hour.

5. As soon as the charlotte is browned, pierce it in the thickest place with a match or other wooden stick. If the stick remains dry, the cake is ready. Remove it with baking mittens and shake a little. The finished charlotte will immediately move from its place on its own.

6. Cool the pie and then place it on a plate.

Another sugar-free charlotte recipe is very similar to the first, but it turns out more satisfying and fluffy. The fact is that the dough contains kefir. The rest of the ingredients are the same. The cooking procedure is also similar.

The charlotte is laid in the same way. First the dough, then the apples and honey.

Kefir dough with the addition of honey will be more fluffy and rich, and will double in size when baked. Due to this, the fruits placed on top will seem to drown in the rising dough, and you will get a single mass of pie.

You can also make charlotte not only without sugar, but also without flour - a dream for women losing weight. In this recipe, flour will be replaced with semolina. Semolina, as you know, swells in liquid when heated, so it is required for a pie several times less than the same flour.

  • several apples, preferably tougher and juicier ones;
  • a glass of semolina;
  • a glass of kefir;
  • one egg;
  • three tablespoons of honey.

1. Knead a liquid dough like sour cream from semolina, flour, eggs, kefir and honey. You can add half a teaspoon of baking soda or baking powder.

2. Pour chopped apples or pears into the dough and stir until they are evenly distributed in the mass.

3. Pour the resulting dough with fruit into the mold prepared in a known way and bake in the same way as the previous options.

Instead of sugar, you can use not only honey. For people with diabetes, stevia can be used instead

  • half a glass of natural yogurt, optionally with the addition of berries or fruits;
  • 1-2 tbsp. spoons of stevia
  • 4 eggs;
  • 6 tablespoons of bran, preferably oat or wheat;
  • a few apples or pears.

1. Mix yogurt and bran in a container, add stevia

2. Beat the eggs until foamy and add to the mixture.

3. Place the prepared chopped fruits in a greased and sprinkled baking dish. Spread them evenly over the surface.

4. Pour the dough evenly on top.

5. You can shake a little so that the dough is distributed over all the apples and between them.

6. Place in the oven at 170 degrees and bake for about half an hour.

All charlotte recipes are approximately the same. And it doesn’t matter whether you put the fruit first and then the dough or vice versa, or you can even mix all the ingredients in one container. This is a matter of the beauty of the pie itself, not its essence.

Some housewives do this: first lay out half the dough, then all the fruit, then the rest of the dough. There is a lot of room for creativity here. The main thing is that you can replace sugar with other sweet, but not harmful products, even flour can be partially or completely replaced. But the principle of making apple pie remains the same.

Charlotte with semolina and kefir will resemble manna, only lighter and less rich in composition, but not in taste. Having decided to exclude harmful foods, you can indulge in treats and desserts.

If you need to limit your sugar intake for some reason, you can bake a wonderful sweet pie without adding it. Charlotte will not become less tasty, but it will be healthy and light. And when preparing recipes without flour, it is also low-calorie.

Using cottage cheese will help give your favorite pie richness without extra calories.

A diet for diabetes does not exclude baking and sweet dishes. Charlotte, prepared without the use of sugar, is one of the desserts that you will surely like. We have selected charlotte recipes for you with a selection of products based on their glycemic index.

Safe products for charlotte

It should be noted right away that any baked goods, including charlotte, should be prepared exclusively from wholemeal flour; the ideal option is rye flour. You can also make your own oatmeal by grinding the oatmeal into a powder in a blender or coffee grinder.

Raw eggs are also an invariable ingredient in this recipe. Diabetics are allowed no more than one egg per day, because the yolk has a GI of 50 units and is quite high in calories, but the protein indicator is 45 units. So you can use one egg and add the rest to the dough without the yolk.

Instead of sugar, you can sweeten baked goods with honey or a sweetener, independently calculating the equivalent of the sweetness ratio. Charlotte for diabetics is prepared from different fruits; patients are allowed the following (with a low glycemic index):

  • Apples;
  • Pears;
  • Plums;
  • Cherry plum.

Secrets of a lush dietary biscuit

The main indicator of a quality charlotte is a well-beaten, tall sponge cake. In order to achieve the ideal result, the ingredients must be mixed in a certain sequence. Considering that some products have been replaced with low-calorie ones, the cooking technology will be as follows.

First of all, you need to separate the yolks from the whites. Everyone does it as best they can. It is recommended to take eggs from the refrigerator, as chilled whites whip better. Our recipe is called “Charlotte without sugar”, but sweetness should still be in the dessert, so feel free to combine the egg whites with honey and start beating at maximum speed for at least 10 minutes.

Next, all we have to do is add a wheat flour substitute. This is done carefully so that the squirrels do not lose their lush appearance. You need to knead the flour with a spoon; the mixer will no longer be useful. The result should be a mass similar to thick pancake batter.

As you know, fruits also have different caloric content. Sugar-free charlotte will be most healthy if you use sour apples as the filling. The Antonovka variety is ideal for this. Such fruits have a fairly dense structure and look aesthetically pleasing in the finished pie.

Pears can also be used in dessert, but they must first be simmered in a frying pan. This applies to hard green varieties.

In order to use dried fruits as a filling, they also need to be prepared first. Well-washed fruits are poured with boiling water and left until the water cools completely. Then the fruits are laid out on a towel and excess moisture is removed.

Fruits with seeds and tender pulp cannot be used as a filling. It is also worth remembering that when preparing apples and pears, the peel must be peeled. To prevent the prepared fruits from darkening while waiting for pouring, they can be dipped in lightly salted water and dried with a towel before placing.

The prepared batter is poured onto the apples and dried fruits placed in the mold and baked at 200 degrees for 20 minutes.

Baking from ready-made oatmeal

If there is oatmeal left over after breakfast, you should not throw it away; it can become the basis for a delicious pie. Such pastries are so tasty that, next time, you will probably specially cook more porridge to bake the pie again.

To make oatmeal pie you will need:
