Cooking tiramisu

The calorie content of such a dessert is quite high (see above), but occasionally you can afford such pleasure.

Beat with a pinch of salt until stiff peaks form. In a separate bowl, beat the yolks with sugar - the mass should turn white and increase in size by 3-4 times.

Mash the mascarpone and add it to the yolks, stirring until smooth. At this stage, you can use a mixer. Carefully add the whipped whites to the yolk-cheese mixture, kneading from bottom to top. Take care of the airiness of the cream, do not overdo it. Since you have allowed yourself tiramisu (you, of course, remember the calorie content), then it should be ideal not only in taste, but also in texture.

Mix chilled coffee and alcohol in a separate bowl. Grease the bottom of the portion molds with a small amount of cream. Soak the Savoyardi sticks in the coffee one at a time, leaving them in the liquid for 2-3 minutes - they should be completely soaked while maintaining their shape. Place the cookies on top of the cream in the molds as tightly as possible. Spread the Savoiardi with half the cream. Repeat the procedure with soaking and laying out the cookies. Place the remaining cream on top and sprinkle generously with cocoa. Refrigerate overnight.

Cooking

Make the sponge cake. Preheat the oven to 180 degrees, line the baking sheets with baking paper.

Mix liquid and instant coffee. We do not recommend removing sugar completely - this tiramisu cake has a low calorie content, and sugar serves to further stabilize the eggs.

Separate the whites from the yolks. Beat the whites with a pinch of salt until fluffy peaks form. Without stopping whisking, add sugar and stevioside. Add the yolks one at a time. The mass will be thick and shiny. Stir in coffee and sifted flour. Stir gently until smooth.

Form the biscuit dough into 3 circles with a diameter of 22 cm and bake until done. This will take approximately 15 minutes. Cool the cakes completely.

For the cream, whip the cream to stiff peaks, add stevioside. Mix cottage cheese and vanilla extract into the cream.

Now assembly. Place the first sponge cake in a mold with a diameter of 22 cm and soak it in coffee. Place 1/3 of the cream on top of the biscuit. Press with a second biscuit and soak again. Add another 1/3 of the cream. Press with remaining biscuit and soak. Spread the remaining cream and sprinkle generously with cocoa. Let sit in the refrigerator overnight and you are ready to enjoy.

To prepare the dish you need:

  • take 0.3 kg of chicken eggs, whiten the yolks and whites;
  • grind 100 g of powdered sugar together with the yolks;
  • mix the yolks until smooth with 0.5 kg of mascarpone;
  • beat egg whites until foamy;
  • add the whipped whites to the previously prepared yolk mass;
  • Place 0.2 kg of biscuits dipped in coffee without sugar on a plate;
  • spread the top of the cookies with cream made from whites, yolks, mascarpone and powder;
  • cover the cream on top with another layer of cookies soaked in black coffee;
  • leave the dessert in the refrigerator for 3 – 3.5 hours.

Calorie content of classic tiramisu per 100 grams is 300 kcal. 100 g of sweet dish contains:

  • 6.4 g protein;
  • 18.3 g fat;
  • 25.5 g carbohydrates.

The classic dessert is rich in vitamins B, A, E, H, PP, K, D, as well as minerals calcium, sodium, magnesium, potassium, chlorine, phosphorus, zinc, iron, copper, iodine, selenium, manganese, fluorine, chromium, molybdenum , cobalt.
