I cook meatballs with rice and gravy very often. They don’t take much time to prepare, but while they’re cooking, you can quickly prepare any side dish, and a full dinner or lunch is ready!

Another good thing about this recipe is that the meatballs can be made and frozen, and, as needed, taken out and cooked with sauce.

Speaking of sauce, I always prepare my favorite sauce for meatballs with tomato paste and sour cream.

Let's prepare all the ingredients and start cooking minced meatballs with rice and gravy. Cooking time can be reduced by boiling the rice in advance. If you haven’t done this, then you should start with cooking rice. Boil the rice in boiling salted water until cooked; see the rice packaging for cooking times.

Place the minced meat in a bowl, add finely chopped onion.

Beat the egg into the minced meat and add salt and ground black pepper.

Finely chop the parsley with a knife and also place it in a bowl.

Place the boiled rice in a bowl with the remaining ingredients. Mix the minced meatballs well.

From the resulting minced meat we form meatballs, slightly larger in size than a walnut. Roll each meatball in flour.

Heat the oil in a frying pan and fry the meatballs for 4-5 minutes on each side. Then add tomato paste to the fried meatballs. Add 200 ml of boiling water.

Add flour to sour cream and add 100 ml of water. Stir everything together well, this is necessary so that the flour does not form lumps when added to the gravy.

Pour the resulting mixture into the pan with the meatballs. Salt and pepper the gravy to taste. Simmer the meatballs in the gravy over low heat for 15 minutes.

Serve the finished meatballs with rice and gravy in portions with mashed potatoes or fresh salad.

  • tomato paste – 4 tbsp., l.;
  • flour – 1 tbsp., l.;
  • cream – 0.2 liters;

Preparation:

  1. The rice is thoroughly washed and cooked until almost done, after which it must be allowed to cool and mixed with minced meat, chopped onion and apple, coarsely grated carrots, beaten egg, salt and pepper - all ingredients are mixed until smooth.
  2. Meatballs are formed from the resulting mass and rolled in flour.
  3. To prepare the gravy, chopped onion is fried in a hot frying pan, after some time finely grated carrots are added to it, all this is fried over low heat for about another 5 minutes. After that, flour, tomato paste, cream are added - all products are mixed, and water is added until the required thickness is obtained. Bring the gravy to a boil, add seasoning and salt to taste.
  4. The meatballs are placed in a deep frying pan and poured with gravy. The dish is simmered over low heat for about half an hour. After cooking, serve with any side dish.

Meatballs cooked in the oven are much healthier than simply fried in a frying pan. Using a simple recipe, you can create a delicious and healthy dinner with an amazing aroma that awakens an incredible appetite.

Ingredients:

  • minced chicken – 0.5 kg;
  • 2 small onions;
  • garlic – 4 cloves;
  • 1 carrot;
  • rice groats – 3 tbsp., l.;
  • 2 chicken eggs;
  • sour cream – 5 tbsp., l.;
  • sunflower oil – 4 tbsp., l.;
  • salt, pepper and spices to taste;
  • water.

As a result, you will get about ten servings of delicious meatballs with gravy.

Cooking meatballs with gravy in the oven.

  1. Rice cereals must be thoroughly rinsed in a colander several times, and then cooked over low heat until half cooked.
  2. Then drain the water and let it cool, then rinse again and mix with the minced chicken.
  3. Add eggs to the mixture, a teaspoon each of salt, pepper and spices. The resulting mass must be thoroughly mixed so that a continuous, homogeneous consistency is obtained.
  4. Then we make small balls from the workpiece - meatballs and place them on the bottom of some dish, the main thing is that it is deep, for baking.
  5. Chopped onions and coarsely grated carrots are fried in a frying pan greased with sunflower oil.
  6. As soon as the vegetables have softened, mix them with 200 ml of water, sour cream, salt and spices - all this is cooked until it boils.
  7. The meatballs, which are in a baking dish, are filled to the middle with ordinary boiled water. Next, the gravy is added, and finely grated garlic is sprinkled on top. As a result, the sauce should completely hide the meatballs underneath.
  8. In an oven preheated to 225 degrees, place a baking dish tightly wrapped in foil with meatballs for 60 minutes.
  9. After 30 minutes, you can taste the sauce and, if necessary, add salt, pepper or some boiled water.

Meatballs in tomato sauce

To prepare meatballs in tomato sauce, we need to prepare the meatballs themselves and the sauce for them.

Minced meatballs:

  • minced beef or veal - 500−600 grams
  • rice, cooked until almost done - 50-70 grams
  • onion - 1 small head
  • egg - 1 piece
  • salt and pepper - to taste
  • flour - 2-3 tablespoons
  • vegetable oil for frying

Tomato sauce for meatballs:

  • onion - 1 head
  • carrots - 1 root vegetable
  • garlic - 3-4 cloves
  • tomato paste - 6-7 tablespoons
  • flour - 1 tablespoon
  • water - 1 liter
  • sugar - 1.5 teaspoons
  • salt and pepper - to taste
  • vegetable oil

How to cook meatballs:

  1. First, let's do the minced meat. Wash the rice and boil until almost done. Let cool.
  2. We pass the meat through a meat grinder.
  3. We clean the onion and also pass it through a meat grinder or chop it very finely. For meatballs, I like finely chopped onions.
  4. Combine the minced meat, rice and onion, beat in the egg, salt and pepper to taste and knead the minced meat.
  5. Roll the minced meat into small balls. It is convenient to do this by periodically wetting your hands with water, this will make the meatballs smoother and more uniform.
  6. Heat a frying pan with vegetable oil. Dip the meatballs in flour and fry on both sides until crust forms. We're done with the meatballs.

Let's move on to the tomato sauce:

I like sauces with the addition of vegetables, at least onions and carrots, sometimes I also add bell peppers to tomato sauce. If you don't like vegetable additions, skip the vegetable section and just make tomato sauce from water, flour and tomato paste.

  1. We clean the onion, finely chop and fry until translucent in the container in which we will prepare the sauce, it is important that the pan has a thick bottom, or we do this in a deep frying pan.
  2. Peel and chop the garlic and place it in a frying pan.
  3. Wash the carrots, peel and grate on a coarse grater. Add the stew to the onions and garlic.
  4. In a separate small frying pan, fry the flour in a small amount of oil until golden brown, stirring continuously. When the flour changes color, gradually add water, stirring thoroughly so that there are no lumps.
  5. Bring the water and flour to a boil and add tomato paste, boil again.
  6. Pour the tomato sauce into the vegetables into a deep frying pan, mix everything, salt, pepper, if necessary, you can add a little sugar.
  7. Carefully transfer our meatballs into the sauce, close the lid and leave to simmer for 15-20 minutes over low heat.

How to cook them in a frying pan

To prepare the meatballs and gravy, you will need the following ingredients:

  • minced poultry meat – 0.6 kg;
  • half a glass of rice cereal;
  • small onion;
  • one chicken egg;
  • salt to taste.
  • boiled water 300 ml;
  • 70 g medium fat sour cream;
  • 50 g flour;
  • 20 g tomato paste;
  • Bay leaf.

Preparation

  1. Rice must be boiled until half cooked and mixed with minced meat.
  2. The onion is fried until transparent and, together with the egg and salt, is added to the prepared rice with minced meat - all this is whipped until smooth.
  3. Meatballs are formed from the resulting mass and sprinkled with flour.
  4. Then the meat balls must be fried on both sides in a hot frying pan for a total of about 10 minutes.
  5. As soon as the meatballs are browned, fill them halfway with boiling water, add tomato paste, salt and throw in a bay leaf. Cover with a lid and simmer for about 25 minutes.
  6. After this, add a mixture of flour, sour cream and half a glass of water, it should be homogeneous - without lumps. After pouring all this into the meatballs, cover them again with a lid and shake the pan so that the mixture is evenly distributed in the dish.
  7. Now simmer the meatballs for 15 - 20 minutes until fully cooked.

Multicooker recipe

Among housewives it is believed that preparing this dish is a very troublesome and time-consuming task; a device such as a multicooker can make the task easier. To do this you will need the following set of products:

  • minced meat – 0.7 kg;
  • steamed rice – 200 g;
  • 1 onion;
  • 2 chicken egg yolks;
  • 300ml boiled water;
  • 70 g ketchup;
  • 250 g sour cream;
  • 5 teaspoons vegetable oil;
  • 2 tablespoons flour;
  • salt and pepper to taste;
  • Bay leaf.

Preparation

  1. Chop the onion very finely, mix with steamed rice, yolks and prepared minced meat until smooth. Add salt and pepper.
  2. Mix 200 ml of boiled water with sour cream, ketchup and flour. Stir the mixture thoroughly so that there are no lumps.
  3. Form meatballs from the minced meat and place them in a multicooker container in one layer.
  4. Select the frying program on the device, add the available vegetable oil and fry the meatballs until a crust appears.
  5. Turn off the multicooker. Pour the prepared sauce over the meatballs, add bay leaves and spices to taste.
  6. Set the multicooker to stewing mode for 40 minutes - this is enough for complete readiness.

Meatballs in tomato sauce

Ingredients:

  • Minced pork and beef - 500 g.
  • Semi-cooked boiled rice - 1.5 cups
  • Onion - 2 pcs.
  • Garlic - 2 cloves
  • Carrots - 1 pc.
  • Tomato paste - 1 tbsp. with a slide,
  • Sugar - 1 tbsp. l.
  • Egg - 1 pc.
  • Salt, pepper, herbs, bay leaf, paprika - to taste,
  • Flour, vegetable oil - for frying.

Preparation:

First we cook the vegetables.

  1. Finely chop the onion.
  2. Chop the garlic.
  3. Grate the carrots on a fine grater.
  4. Add rice, onion and garlic, egg, salt and pepper to a deep bowl with minced meat.
  5. Mix everything until smooth.
  6. Roll the minced meat into a bun (ball), roll it in flour, and so on throughout the minced meat. Place the balls on a cutting board.
  7. Heat a frying pan with vegetable oil and place the meatballs on it.
  8. Fry them over high heat until golden brown and turn them over.
  9. Our meatballs are ready. Now we will prepare the sauce for them.
  10. Place the onion in a well-heated frying pan with vegetable oil.
  11. Next we lay out the carrots.
  12. Mix everything and fry a little, 3-4 minutes.
  13. Add tomato paste here. Mix well and let simmer for a couple of minutes.
  14. Dilute the sauce with water.
  15. Add bay leaf, ground black pepper, salt, paprika.
  16. Add greens. Can be fresh or frozen. We have dill.
  17. Add sugar, mix everything and leave to simmer for 5 minutes.

To prepare a tasty and healthy dish from childhood, you don’t need anything supernatural. A simple set of ingredients and a little patience and meat balls are on your table:

  • minced meat – 400 g;
  • 1 small onion;
  • egg;
  • half a glass of rice;
  • 30 g flour
  • 50 g sour cream;
  • 15 g tomato paste;
  • 300 ml boiled water;
  • salt;
  • Bay leaf.

Preparation

  1. Cook the rice until almost half done and mix with the prepared minced meat and egg.
  2. Chop the onion very finely and bring it to a state of transparency in a hot frying pan, mix with the previously prepared mass to a homogeneous consistency.
  3. Roll the dough into small ball-shaped cutlets and roll them in flour. Fry in a hot frying pan for about 3 minutes on each side to form a crust.
  4. Mix a glass of boiling water with 15 grams of tomato paste, add salt, pour the resulting mixture over the meat balls, add a bay leaf, add salt and leave under a closed lid over low heat for a quarter of an hour.
  5. Mix one hundred milliliters of water with 50 grams of sour cream and 30 grams of flour so that there are no lumps, and add to the meatballs. Shake the pan thoroughly so that everything is thoroughly mixed, and simmer for about a quarter of an hour until done.
